Data fitted best to the following model: z = 4.07-0.53 * x2 + 0.26 * x3 - 0.33 * y - 1.32 * y2 (r2 = 0.88; p = 0.001) where z is the CGTase activity (in U/mL), x is the ammonium concentration and y is the starch concentration. Other terms (x, y3, x * y) were discarded (p > 0.04)
