The optimal activity was observed at 50 °C was expressed as the activity maxima 100% (a) and the activity at 40 °C was expressed as the activity maxima 100% (b). The optimal temperature for xylanase activity was measured at different temperatures ranging from 30 to 100 °C (a). To determine the thermostability, the enzyme was incubated at 40 °C, 50 °C, 60 °C, 70 °C and 80 °C for 30 min, followed by xylanase assay under standard conditions at pH 5 and 50 °C (b).
