Hydrolytic activity of Mg-αGlu (red bars) and Mr-αGlu (black bars) on the referred substrates. All reactions were incubated for 20 min at 30 °C and pH 7.0. After inactivation at 80 °C, released glucose was determined using the GOD-POD colorimetric assay. Activity towards pNPG was determined by the measurement of the free pNP in the reaction. The values obtained are the average of three independent experiments. Standard errors are indicated
