A comparison of the emulsion index of purified AXE and widely used surfactants. For comparison, some commonly used surfactants were also used, including SDS, sodium oleate, Tween 20, detergent and xanthan gum. BSA was employed as control. All the proteins and surfactants were added at a concentration of 500 µg/ml dissolved in 50 mM Tris–HCl buffer, pH 7.4
