Volatile compound production of non-growing Lactococcus lactis strains. L.lactis KF147, SK11, 1157, MG1363 and IL1403 in a buffer system containing 100 mM sodium phosphate, pH 6.0, 2 mM NADH, 10 mM α-ketoglutarate, 0.1 mM pyridoxal phosphate and the amino acid mixture. Displayed volatile compounds: A: 2-methylpropanal, B: 2-methylpropanol, C: 3-methylbutanal, D: 2-methylbutanal, E: phenylacetaldehyde, F:3-methylbutylvalerate, G: 2-isopropyl-5-methyl-2hexenal.
