Specific activities were determined at a substrate concentration of 10 mg.ml^-1 at 45°C in 50 mM citrate phosphate buffer pH 4.8 and expressed as units per μmol of enzyme in order to ensure comparison independently of molecular mass. Values are means of triplicate independent measures and standard errors of the mean are shown next to each value. N.D.: no activity detected.
